Sweet Potato Pancakes

I love sweet potatoes. I love pancakes. Naturally, I like the two combined. This recipe is fairly simple and so comforting on a cold morning. They're gluten-free, vegan, and the full serving of veggies doesn't hurt either!

Ingredients:

  • 1 small sweet potato, steamed and peeled (you can also microwave in a paper towel)
  • 1/3 cup buckwheat flour
  • 1 tbsp cinnamon
  • 1/2 tbsp fresh grated ginger (ground will work)
  • 1 flax egg (1 tbsp ground flax+3 tbsp water)
  • 2/3 cup+3 tbsp hemp milk
  • 1/4 mashed banana
  • 1 tsp baking powder
  • Pinch of baking soda
  • 1/2 tsp of nutmeg and cloves
  • 1 tsp vanilla extract
  • 1/2 tbsp coconut oil

Method:

Start by steaming your sweet potato. Feel free to stick it in the microwave for 5 mins, stabbed with a fork and wrapped in a paper towels. When it's ready, slice it open and scoop out the orange part and discard the skin. Combine all of the Ingredients in a blender. The mixture should be thick but manageable. Add a little coconut oil to a heated frying pan. Scoop about 1/4 cup of the mixture to the pan and flatten a little. Cook for about 2 mins (until it starts to bubble), and flip. Continue like this with the remaining batter. Serve with your favorite toppings!

I topped mine with maple syrup, raw maple almond butter, and hemp hearts!
