Raw Zucchini Linguini With Hempseed Pesto


This pesto is delicious paired with brown rice pasta, buckwheat noodles, a vegetable dip, toast, pizza, etc. It's especially good with zucchini noodles (zoodles) for a jazzed up bowl of veggies. Zucchini has a fairly neutral taste, so when spiralized it tastes like pasta! You can either eat it raw or lightly sautée it in coconut oil. It's such a fun way to incorporate more vegetables. This pesto is made with hemp seeds, providing a huge dose of complete protein and omega 3s and 6s, and essential fats. 

Serves 3

  • 1/2 cup hemp seeds
  • 1 1/2 cup basil
  • 1/2 cup spinach
  • 1 lemon juiced
  • 1 clove garlic
  • 1/3 cup water
  • 1 tbsp EVOO
  • Dash of Himalayan salt
  • Dash of ground pepper


First blend the seeds until they form a powder. Then add the basil and spinach and blend thoroughly. Next add the garlic, lemon juice, and salt/pepper. Add the water in a steady steam while it's blending. Lastly add the EVOO. Enjoy!
